I rarely cook. The last time I made a chicken was my first year of university. Today, I pleased myself and my family (especially my mom!) greatly by cooking a tasty meal for dinner. I was so proud of myself that I had to share the recipe (and pictures) with you!

Ingredients (modified based on what I had)

2 cups of basmati rice
2  chicken breasts tenders
1 tablespoon cornstarch
1 tablespoon palm oil
4 teaspoons olive oil
  • White Onion
  • Red Peppers
  • Purple Onions
  • Tomatoes
1/2 cup coconut milk
2 tablespoons Sriracha (Huy Fong)
1 tablespoon sugar
1 tablespoon lemon juice
2 tablespoons chopped fresh cilantro
A little bit of fish sauce


  1. Cook rice. Keep warm.
  2. Cut chicken into strips.
  3. Toss chicken with cornstarch and palm oil.
  4. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat.
  5. Add chicken to pan; sauté 5 minutes.
  6. Add white onion, purple onion, red peppers, tomatoes
  7. Cook for 1 minute.
  8. Stir in Sriracha, sugar, and lemon juice; cook 45 seconds or until thoroughly heated.
  9. Add Coconut milk.
  10. Sprinkle each serving with cilantro.
  11. Serve chicken mixture over rice.
